Slow Cooker Shredded Beef Tacos
An easy crock pot meal that requires little prep time. Use the recipe to make a healthy 21 Day fix approved taco seasoning. Pure delicious!

Ingredients

pounds
Beef Chuck roast
trimmed of the visible fat
1
can
Low Sodium Beef Broth
1/4
large onion
chopped
1
can
diced tomatoes with chiles

TBSP
chili powder
consider using less here if you don’t like spicy food.

Instructions
1. Combine all of the seasoning to make a Clean Taco Seasoning Mix.
2. Place the onions in the bottom of the slow cooker.
3. Rub the roast with 1/2 the seasoning mix. Then place on top of the onions.
4. Carefully pour the broth into the crockpot to the side of the roast.
5. Cook on low for 8-10 hours, or until it shreds easily with 2 forks. Remove from the crock pot and shred.
6. Drain all but about 3/4 cup of the cooking liquid and then add the meat back into the crop pot.
7. Add the tomatoes with chiles and the remainder of the taco seasoning mix.
8. Mix well and cook another 20 minutes to allow flavors to deepen.
Serve with 2 small corn tortillas or over spinach
