I was looking for a quick recipe that I could throw in the crokpot and have it cook while I am out and about running the kids to this and that. The best part is that it is 21 Day Fix approved!! I made a couple small changes as it was just a bit spicy the first time around. Enjoy!
Slow Cooker Shredded Beef Tacos Recipe
An easy crock pot meal that requires little prep time. Use the recipe to make a healthy 21 Day fix approved taco seasoning. Pure delicious!

Ingredients
- 2 pounds Beef Chuck roast trimmed of the visible fat
- 1 can Low Sodium Beef Broth
- 1/4 large onion chopped
- 1 can diced tomatoes with chiles
- 2 TBSP chili powder consider using less here if you don't like spicy food.
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp Crushed Red Pepper Flakes consider using less here if you don't like spicy food.
- 1/2 tsp dried oregano
- 1 tsp Paprika
- 3 tsp Ground Cumin
- 1.5 tsp sea salt
- 1 tsp black pepper

Instructions
- 1. Combine all of the seasoning to make a Clean Taco Seasoning Mix.
- 2. Place the onions in the bottom of the slow cooker.
- 3. Rub the roast with 1/2 the seasoning mix. Then place on top of the onions.
- 4. Carefully pour the broth into the crockpot to the side of the roast.
- 5. Cook on low for 8-10 hours, or until it shreds easily with 2 forks. Remove from the crock pot and shred.
- 6. Drain all but about 3/4 cup of the cooking liquid and then add the meat back into the crop pot.
- 7. Add the tomatoes with chiles and the remainder of the taco seasoning mix.
- 8. Mix well and cook another 20 minutes to allow flavors to deepen.
- Serve with 2 small corn tortillas or over spinach
- 21 Day Fix: 1 Red. Don't forget to count 1 green if using spinach or 1 yellow if using tortillas.
