This is a great recipe to get you and the family a bunch of protein! It can be made pretty quickly and easily – plus is it 21 Day Fix approved!
It is great for a light dinner or packed lunch. My husband really loved this Mexican Lasagna recipe the first time we tried it, so we will be adding it into our monthly menu rotation.
Mexican Lasagna Recipe

Ingredients
- 1 red bell pepper diced
- 1 orange bell pepper diced
- 1 medium onion diced
- 1 pound lean ground turkey
- 1/4 cup southwest seasoning From 21 day fix
- 2 cups shredded cheese
- 1 1/2 cups fat free refried beans
- 2 tsp extra virgin olive oil
- 12 corn tortillas
Southwest Seasoning
- 1 Tablespoon chili powder
- 2 teaspoon Ground Cumin
- 1 teaspoon coriander
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon Paprika
- 1 teaspoon sea salt
Servings: people
Instructions
- Heat oil in a large skillet and add diced peppers and onions and cook until tender. Remove from skillet and set aside.
- Brown ground meat in the skillet until almost done.
- Add the cooked onions and peppers to the meat mixture, along with southwest seasoning and 1/4 cup of water. Simmer 10 minutes.
- Spray the bottom of a 9x13 pan with cooking spray. Line the bottom with 6 tortillas. Spread half the refried beans over the tortillas.
- Spread 1/2 the meat and vegetable mixture over the beans.
- Repeat the layers. (tortillas, refried beans, and meat and vegetable mixture)
- Spread the cheese evenly over the top.
- Bake at 375 for 30 minutes, or until heated thorough and cheese is hot and bubbly.
