Ingredients

olive oil
extra virgin

pound
ground turkey
93% lean
1/2
red onion
chopped
1/2
green bell pepper
chopped

clove
garlic
chopped or pressed

soy sauce
reduced sodium

Tbsp
seasoned rice vinegar

cilantro
chopped

romaine lettuce, bibb lettuce, or red leaf lettuce
Instructions
Heat oil over medium-high heat in a medium saucepan.
Add turkey, onion, and bell pepper. Cook 4-6 minutes, or until turkey is cooked through and onion is translucent.
Add garlic, soy sauce, and vinegar. Cook, stirring occasionally, for 2-3 minutes or until most of the liquid is evaporated.
Add cilantro and mix well. Remove from heat.
Evenly spoon mixture into lettuce leaves, and wrap the leaves around the mixture.
