I found this easy and delicious Greek chicken pita recipe on SimpleCleanFitness.com – we are definitely going to add this to our weekly rotation. We served this Greek chicken pita for dinner with sweet potato fries. This Greek chicken pita recipe would also make a great quick lunch or afternoon snack. Just be sure to pack your pita separate and put it together just before eating so the pita doesn’t get too soggy.
Greek Chicken Pita Recipe
Ingredients
- 1 whole wheat pita I used a 6.5 inch
- 3 ounces chicken cooked and cut into 1 inch cubes
- 1 Tbsp olive oil extra virgin
- 1/2 cup tomato chopped
- 1/2 cup cucumber chopped
- 1 Tbsp red onion chopped (optional)
- 1/4 cup romaine lettuce shredded
- 2 Tbsp feta cheese crumbled
Chicken Marinade
- 4 Tbsp dried parsley
- 4 tsp dried onion flakes
- 2 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1 tsp sea salt
- 1/4 tsp ground black pepper
Servings: person
Instructions
- Combine all dry ingredients of Chicken Marinade in a bowl.
- Season cubed raw chicken with marinade and place in refrigerator in a covered container overnight.
- Cook chicken in 1 Tbsp of extra virgin olive oil.
- Fill pita halves evenly with chicken, tomato, cucumber, onion (if desired), romaine, and cheese.
- Enjoy!
